An intensely hearty, creamy, and cheesy potato-bacon soup that'll warm your cockles on the coldest winter's night, leaving you wanting for nothing.

Ingredients

  • 10 slices cooked bacon diced
  • 3 cups chicken broth
  • 2 pounds potatoes unpeeled and diced
  • 1 medium yellow or white onion diced
  • 6 garlic cloves minced
  • 1 tablespoon dried parsley
  • 4 tablespoons unsalted butter
  • 1/3 cup all-purpose flour
  • 1 12-ounce can evaporated milk or half-and-half or heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • 1 stalk green onion, chopped
  • 1.5 tsp sea salt
  • 3/4 tsp black pepper

As we head into Winter, it's important to have those special foods that mean snuggling into sweaters, under blankets, and intentionally turning the heat down just to feel the magic of the flavor and warmth of a hearty mug of soup. That is this soup.

It is perfect. As Gordon Ramsay says, "It'll warm your cockles."  I'm always looking for an excuse to warm my cockles with this one. The combination of flavors is Winter, it's Christmas, it's a snowy day, and it's snuggle me and watch a movie warm. There are no Winter blues with this in a pot, and it won't last long. Make extra.
