Barbar's Granola

Toasty, sweet, crispy, and a hint of tart mixed in, this is Jordan's favorite granola. Since granola is so expensive, we set-out to make it from scratch, saving about $10 per batch. It's the perfect granola.

Dry Ingredients:

  • 3 Cups Rolled Oats
  • 3/4 Cup Almonds 1/2 Cup chopped, 1/4 Cup whole
  • 1/4 Cup Walnuts coarsely chopped
  • 1/2 Cup Pecans coarsely chopped
  • 1/2 Cup Flaxseed Meal
  • 1/4 teaspoon salt
  • 4 teaspoons Ground Cinnamon

Wet Ingredients:

  • 3/4 C Honey
  • 1/2 C Coconut oil melted
  • 1 egg white
  • 1 Tablespoon vanilla

After Baking:

  • 1 Cup Dried Cranberries

  1. Mix together dry ingredients. In a separate bowl, mix together wet ingredients. Combine, mixing together with hands.
  2. Lay down wax paper on a baking sheet, and spread mixture. Pat down to create a single granola sheet if you want big chunks or bars.
  3. Bake at 300 degrees for about 60 minutes, checking every 20 minutes for a nice toasted golden brown look and a toasted smell. If you want looser granola, stir every 15 minutes.
  4. When golden, remove from oven and place on cooling rack.
  5. Spread dried cranberries evenly across the top.
  6. To make big granola chunks, lift one end of the wax paper and roll forward as if making cinnamon rolls, lifting the gripped edge higher away from the granola until all the granola has been crumbled. Cool on the baking sheet overnight. Place into a sealed container and get your yums on.
